Q: Where is the manual? There was no documentation of any kind in the package. I'm wondering the same thing.

Q: The start position of this display seems shifted by two pixels compared to a regular ST7735S display - how do I compensate for this in the code?

I think the adafruit st7735 cpp arduino library had something in it for this. Check out the declarations on GitHub for red tab vs green or black.
